After graduating from high school in 1999, Ryan started his apprenticeship two years later at Friends Restaurant at the Hyatt Hotel in Perth.
In 2002, Ryan moved to Star Bistro and worked with Chef/Owner Bruce Chapman who was arguably Perth’s leading specialist in Modern Australian cuisine. It was Bruce who taught Ryan that the best food was clean and simple – focusing on the very best ingredients, refining the methods of cookery, and above all letting the food speak for itself. For the third year of his apprenticeship, Ryan moved across to Matilda Bay Restaurant to work on the busy pastry and banquet sections under executive chefs Richard Hinson and Angelo Nici.
In 2004, Ryan took a position at CBD to complete his four year apprenticeship. Working for chefs Brad Hatfield and Nic Rose, Ryan carried on producing Modern Australian food to the highest standard and in 2005 qualified as a chef.
Ryan returned to Matilda Bay upon completion of his apprenticeship in late 2005, and spent a year as Chef de Partie of the Sauce Section. In 2007, Ryan moved to Melbourne to take up a position at Treasury Restaurant working with Richard Wills and Daryl Hand. The food at Treasury was up there with the best in Melbourne at the time.
In 2008, feeling he had the necessary skills to take his career overseas, Ryan was offered a role as a private chef in the luxury super yacht industry. Working out of St Tropez, Cannes and Monaco in the French Riviera, Ryan spent the 2 years that followed working aboard the worlds most prestigious yachts cooking for guests that included royal families and celebrities.
In the summer of 2009 Ryan returned to Perth and launched Ryan John Private Chef to great success. The personal chef experience was a new concept at the time, however the company has established itself as the leader in the market and now boasts an impressive array of talented young chefs, sommeliers and cocktail waiters that bring to the table more than 90 years of experience.
